Aho is close.  All of his symphonies except the Sixth has been recorded.  And on can still here it on YouTube.

He has a No. 17 that hasn't been premiered yet so isn't available yet.

No, he has 11 symphonies so far.  8 through 11 haven't been performed/recorded.

It seems to me that the OP may be next to impossible to answer.

Living composers who have composed many symphonies tend to keep doing it.  So far I thought that Aho completed fourteen.  I now discover he has completed seventeen!!!

I know Corigliano has completed has completed three (I check his website).  They all have been recorded.

--Curiously, no symphonies yet from Magnus Lindberg and Esa-Pekka Salonen, two notable contemporary composers.

--Undoubtedly, there are composers that I've missed or forgotten to mention.

--Finally, here's a list of important, now deceased composers who composed symphonies in the 2nd half of the 20th century, & in some cases, the early 21st century, and the number of symphonies that they wrote (*=my favorite cycles, though I'm still working on getting to know all of the cycles mentioned below):

Einer Englund 7, Vagn Holmboe 13*, Joonas Kokkonen 4*, Alan Pettersson 16*, Einohojohani Rautavaara 8*, William Schuman 10*, Vincent Persichetti 9* (with 2 withdrawn, so 7), Alan Hovhaness 66, Alan Stout 4--? (apparently, there were recorded premieres by Solti & Ozawa, but to my knowledge none has been released on LP or CD.  By the way, Shostakovich admired Stout's 4th, as they corresponded & were friends. I have an interest in Vagn Holmboe's students, such as Stout, who sadly passed away in February of this year), Alfred Schnittke 10, Miloslav Kabelac 8, Howard Hanson 7, Sir Michael Tippett 4, Andrzei Panufnik 10, Lou Harrison 4, Robert Simpson 11, Malcolm Arnold 9, John McCabe 7, Peter Mennin 9, Witold Lutoslawski 4, Henri Dutilleux 2, Walter Piston 8, Henryk Górecki 4, Robert Sessions 9, and George Rochberg 6.

Again, I'm sure I've left some composers out... ?

David Maslanka just passed away (Aug 07, 2017).  He has a great home page: http://davidmaslanka.com/

He composed ten symphonies.  All of them with the exception of the First and the Tenth have been recorded.

His First Symphony appears to have been his doctoral work.

He passed away before he completed his Tenth Symphony.  His son completed the work.

It was premiered on April 3, 2018.  Considering his stature in the band world my guess that the symphony will be recorded in the near future.

No, he has 11 symphonies so far.  8 through 11 haven't been performed/recorded.

Ok thanks. Personally I don't like any of the symphonies I've heard.
