Haydn is easily number one, with just over 100 symphonies and over 50 string quartets these two genres alone take up a lot of space in my collection.

Mahler, Shostakovich, Vaughan Williams, Beethoven, Arnold, Nielsen, Tchaikovsky,  Alwyn, Britten (non-opera) Holst, Bax.

It is unclear whether the question pertains to the number of recordings owned, or the percentage of works by the composer. If the latter, Alban Berg would qualify, since even though I don't own a great many Berg CDs, I have all his oeuvre several times over. However:

Beethoven, Chopin, Bach, Haydn, Mozart, Mahler, Wagner, Berlioz, Carter, Boulez, Stravinsky, D. Scarlatti, Monteverdi.

Meaning, composers of whose music you have the largest number of recordings in your library, including (multiple) duplicates.
