Hollywood tells us that Beethoven was the only dog amongst these. And a mighty big dog he was too.

But his Bach was worse than his bite.

Edit: but to answer the question, I choose Beethoven, not particularly because I like him, but because he chronologically and stylistically comes closer to my preferred aesthetic.

Using number of recordings listed at Archivmusic, it is Mozart (7k) then Bach (5.5k) then Beethoven (5k) then  Brahms (3.7k) then Tchaikovsky (3.1k)
