Oh, we have some authentico dives around, yes, I will do lunch tomorrow,... but, I went to the place down the street for burrito lunch and got OldElPaso ground beef rolled up with sauce on top and rice/beans. And the waiter looked liked he despised me, LOL!

Yea, at least I'll get a carne asada torta tomorrow.... LOl, I just wear my LaMigra shirt and get treated lik......


but yea, I just CAN'T trust frozen chicken unless I'm certain...



now I'm typing and getting hungry and must still hunt down dinner tonight...

     I use their enchilada sauce....

I went to the other "white" joint (not the "authentica"), but it was much better. But I wimped out and just got the lunch chimi... but it was just what I needed to fill the gap... could've eating a whole other plate...

but they didn't have tortas... which seems to be an 'authentico' thing.... tomorrow??



even lunch can be a littttle expensive though....







I recently made my staple OldElPaso ground beeft + shredded cheese tacos. Half way through, I looked into the taco and saw a mound of brown beef and a mound of yellowish half melted cheese,--- and I couldn't go on...

I've become obsessed with the Bible/jew thing of not eating cheese with beef... and it IS kind of disgusting... but it does make  the Traditional American Habits difficult sometimes...





Man, I'm still hungry...

     They don't stay in the fridge for years, no.......I understated when I said they are decent, they are very good. I have them with refried black beans or sometimes pintos, with melted cheese on top. I then apply a scientific formula with the sauces so they properly overlap.

     I haven't made enchiladas in a long time. I use the same basic taco gear (different mixes including Old El Paso, corn tortillas, beef, beans, cheese, the aforementioned enchilada sauce). In addition I sprinkle diced onion and sometimes canned tomato on top, with the cheese over everything. Once I included sliced black olives in the filling and that was nice.

     

     I chop them into chunks, not too fine, though.
