What are some piano works with lots of gratuitous fast show-off playing? Here's an example:

I've heard Beethoven's 5th PC played with more technical virtuosity than that. By far. Or check out Rachmaninov. Liszt...

the sample? glenn gould playing beethoven's 2nd eroica variation. it's officially called 15 variations w/fugue in e flat, but it has the same theme as the 3rd symphony so it's informally known as the eroica variations. i don't remember which came first though.

i couldn't hear the clip, but anyways, it's probably a good thing yngwie doesn't compose for the piano. I don't think the results would be good, he should stick with the guitar  ;D
