There is no profound difference. A Summer Day is using "Summer" as an adjective (describing the day as Summer like), whilst a Summer's Day is using "Summer" as a noun (a day that belongs to Summer).  In other words, "A Summer day" is used to describe the day as having "a Summer's Day"'s properties. The only difference is that a Summer day need not necessarily be in Summer. Clear now?
