I should have grilled with it before now--so much flavor. Man, that's tasty. We bought an infrared grill in the spring (has to be electric where we are) and have been grilling chicken breasts and steak like mad with the stuff.
Maybe I'll try hickory next...

Mesquite is great for grilling. I also highly recommend this product: mesquite wood incense, made by a company in Santa Fe. Incense is usually to strong for me--and I can't stand those that smell like bad cologne. But all of this company's products (cedar, juniper, etc.) have a really pleasant aroma that reminds me of being around a campfire in the mountains.

Maybe in the winter when I can't grill. Right now, the smell of mesquite is everywhere.
I lived in Texas for a while and grilled with mesquite quite a bit, and grew to like it better than hickory, which is what is more common in Louisiana where I am from. I need to get the mesquite chips more often and add them to my grill, since it does make a big difference.

I like both but prefer mesquite for the taste. Hickory may be a bit harder wood and cook slower, but I've never done a real comparison for that aspect.
