I realize that this has been probably done to death, but this piece is especially dear to my fiancee, and she wants the "best".

Please nobody shoot me for suggesting, of all people, Harry Connick, Jr. Beautiful, instantly affecting piano playing, and the singing is, if pop-ish, still heartfelt (and in Latin, with a New Orleans accent). There are more classical versions, and more authentic versions, and probably quite a few better-sung versions, but none that I'd rather listen to.
Sadly, it's on a Christmas album (though one of the only three Christmas CDs that I can willingly listen to):

My favorite recording of Schubert's Ave Maria is sung by Pavarotti on his Christmas album titled O Holy Night. There are 3 Christmas tracks but the remainder of the CD is good listening the rest of the year. This contains:
Bach - Gounod Ave Maria;
Schubert - Melichar Mille Cherubini in coro;
Franck Panis Angelicus;
Berlioz Sanctus from the Requiem;

I sung that once during a marriage.
I am happy to say, the couple are still together, and still friends.
I listened to this recording, for it was recorded, and now I know, for sure, my voice was better 21 years ago. :P
But I am still up to the job, Andy, so if you are willing....... ;D
