Asking because I have not listened to much between Berlioz and Debussy & looking for some recommendations

For me (an outsider in this repertoire 8)) something like:

George Bizet, l'Arlésienne
Camille Saint-Saëns, Third Symphony
Camille Saint-Saëns, Piano concerto no. 5 ('Egyptian')
Gabriel Fauré, Requiem
Charles-Marie Widor, Sinfonia Sacra

This is scarily close to what I would have written.  :) The Nocturnes are a particularly fine pick...

The Six

Charles Valentin Alkan, a great who is largely unknown and unplayed. He wrote both a symphony and a concerto for solo piano.

Louis Vierne: Complete Organ Symphonies I-VI and Symphony for Orchestra.

Cesar Franck: Le Chasseur Maudit (The Wild Huntsman)

Alexandre Guilmant: Complete Organ Sonatas, Symphonies I and II for Organ and Orchestra and Solemn Mass #3

And I will join others in recommending everything by Ernst Chausson.

If you want late 19th Century/20th Century, do not forget (besides the obvious) the works of Francis Poulenc.

I love Le chasseur maudit! The old Munch recording leaves scorch marks in the carpet. :)

And I remember fondly, too, your deployment of Vierne's symphony in a "name that tune" contest, last year...

YES!!!  That recording (RCA with Boston) had a completely atomic performance of the Chausson Symphony too!

Unfortunately, that pairing is not available on CD (at least on Amazon), but RCA does offer this:
