I love the sound of small organs and would like to buy one someday... Are there any recordings you would recommend?

What period are you interested in?

If it's Baroque, I think most recordings of Handel's organ concertos utilize chamber organs of one sort or another.

This CD is a tasty outing--the concertos are performed with chamber organs as the solo instruments--if you can ever find it at a reasonable price.   It was included as an extra in the box of Vernet's Bach integral, and the current Amazon MP price for the single CD ($213.85) is actually two dollars more than the current price for the entire set. ???
