That's how I've always understood the word assai, too.
There's a wonderful tempo marking in the finale of Sibelius's Second Symphony: Moderato assai8) Not too moderately..

Yes, but in this case, "Quite" and "very" are quite close in meaning. To use Karl's numbering scheme, my take (I think this was how we took them back in my playing days) has been:

0 vivace
1 vivace assai
2 molto vivace

No comment on Kuijken's Bear though.
